Directions
1
Preheat and prep the pan. Heat the oven to 375°F (190°C). Coat a 12 to 14-cup nonstick Bundt pan very generously with cooking spray, making sure to reach every fluted surface.
2
Cook the beef. Add the ground beef to a large nonstick skillet over medium-high heat. Cook, breaking it up into small pieces, until fully browned, about 5 minutes. Stir in the taco seasoning and water and cook according to the packet directions. Transfer to a plate and let cool for 5 minutes.
3
Layer the Bundt pan. Scatter about one third of the Doritos into the bottom of the pan. Top with half the beef, ½ cup tomatoes, and 1½ cups shredded cheese. Repeat these layers once more. Finish with the remaining Doritos and 1 cup of cheese on top.
4
Cover and bake. Coat a sheet of aluminum foil generously with cooking spray and press it firmly over the Bundt pan, sprayed side facing down. Bake for about 15 minutes until the cheese is fully melted throughout.
5
Invert and serve. Discard the foil and let the pan rest for 5 minutes. Place a large serving platter over the top and flip confidently to release the nacho tower onto the platter. Top with shredded lettuce, dollops of sour cream, a drizzle of hot sauce, and the sliced jalapeños. Serve immediately with guacamole, salsa, or cheese sauce on the side if desired.
Cook's notes
Spray the pan generously
The Bundt pan must be thoroughly coated — every ridge and curve — or the tower will stick and fall apart when inverted. A nonstick pan is essential, but cooking spray is your safety net. Don't hold back.
Let it rest before flipping
Five minutes of cooling after baking is enough to let the layers firm up slightly for a cleaner release. Flip too soon and the melted cheese won't hold everything together — flip too late and the chips may stick to the pan.
Have your toppings ready
Once the tower hits the platter it's ready to eat — Doritos soften quickly once baked, so add the lettuce, sour cream, and jalapeños immediately and get it to the table while everything is still warm and crisp.
