Mix the honey mixture. In a small bowl, whisk together 1 tablespoon of the olive oil, the honey, vanilla, cinnamon, nutmeg, almond extract, and salt until smooth and well combined. Set aside.

Toast the oats. Warm the remaining 1 tablespoon of olive oil in a skillet over medium-low heat. Add the rolled oats and cook, stirring frequently, until they turn golden and smell nutty, about 5 to 7 minutes.

Make the crumble. Pour the honey mixture over the toasted oats and stir to coat thoroughly. Reduce the heat to low and continue cooking, stirring constantly, until the mixture turns a deep golden brown, another 3 to 5 minutes. Remove from the heat, transfer to a bowl, and leave to cool completely — the crumble will harden as it cools.

Assemble and serve. Spoon the Greek yogurt into a bowl. Arrange the orange slices on top, then scatter the pistachios and chocolate chips over. Break the cooled oat crumble into small shards and sprinkle as much as you like over the bowl. Finish with a drizzle of honey and serve immediately. Store any leftover crumble in an airtight container.
