Prepare the dish. Preheat the oven to 350°F (180°C). Lightly grease a 9x13-inch baking dish and set aside.

Fold the tortillas. Fold each tortilla back and forth in 1½-inch accordion pleats. Stand the folded tortillas upright side by side in the baking dish, pressing them snugly against each other. Gently fan them out until they span the full length of the dish.

Fill with sausage. Tuck the sausage slices evenly into the folds of the tortillas, distributing them throughout the dish.

Add the toppings. Set aside 2 tablespoons of green onions for garnish. Scatter the rest evenly over the tortillas, followed by the chopped red bell pepper and a generous layer of shredded cheese.

Make the egg mixture. In a medium bowl, whisk together the eggs, half-and-half, salt, pepper, and hot sauce until fully blended. Pour evenly over the casserole, then use a fork or spatula to gently press the mixture down into the tortilla folds so it soaks in well.

Bake and serve. Bake for about 35 minutes until the top is golden brown and the cheese is bubbling. Scatter the reserved green onions over the top and serve hot with extra hot sauce, sliced avocado, salsa, or sour cream.

The accordion fold
Don't rush the folding step — tight, even pleats create more pockets for the sausage and egg mixture to nestle into, which is what makes each bite so hearty and satisfying. Aim for folds about 1½ inches wide.
Adjust the heat
The hot sauce adds a gentle background warmth rather than intense spice. If you prefer milder flavors, leave it out entirely. For more heat, swap regular smoked sausage for a spicy andouille or chorizo.
Make it ahead
Assemble the casserole the night before, cover tightly, and refrigerate. In the morning, pour the egg mixture over the top and bake straight from the fridge — add 5 extra minutes to the baking time.
