Sauté the vegetables. Melt the butter in a large soup pot over medium heat. Add the onion, celery, carrots, thyme, and parsley and cook, stirring occasionally, for 5 minutes until the vegetables begin to soften.

Simmer the soup. Add the cubed potatoes, sliced sausage, and chicken broth. Bring to a full boil, then reduce the heat and simmer uncovered for 25 minutes until the potatoes are completely tender and the sausage has infused the broth with its smoky flavour.

Finish and serve. Season generously with salt and pepper. For a thicker, heartier consistency, press a few potato pieces against the side of the pot with the ladle to break them up before serving. Ladle into deep bowls and serve hot.

Control the thickness
The smashed potato trick is simple but effective — breaking a handful of cooked potato chunks against the side of the pot releases their starch directly into the broth, thickening it naturally without flour or cream. Do as much or as little as you like depending on the consistency you prefer.
Sausage choice matters
A ring smoked sausage — such as kielbasa — gives the most authentic flavour for this style of soup. Its smokiness permeates the broth during the simmer. Andouille, bratwurst, or any firm smoked sausage all work well as alternatives.
Even better the next day
Like most potato soups, this one thickens considerably overnight as the potatoes continue to absorb the broth. Reheat gently and add a splash of extra broth to loosen it back to your preferred consistency.
