Prep the dates. Open each pitted date and press it flat with your fingers. Arrange all 12 on a baking sheet lined with parchment paper.

Add peanut butter. Spoon about ½ teaspoon of peanut butter onto each flattened date, spreading it slightly toward the edges.

Melt the chocolate. Combine the chocolate chips and coconut oil in a microwave-safe glass or ceramic bowl. Melt in 15-second intervals, stirring thoroughly after each one, until completely smooth — about 1 to 3 minutes total.

Top and finish. Drizzle about 1 teaspoon of melted chocolate over each date. Immediately scatter the crushed peanuts on top and finish with a small pinch of sea salt over each cluster.

Coconut oil is the secret
Adding coconut oil to the chocolate chips before melting gives the drizzle a thinner, glossier consistency that sets to a satisfying snap rather than a waxy, thick coating. It also helps the chocolate melt more evenly without scorching.
Don't skip the sea salt
The pinch of sea salt over each cluster is what makes these taste like a proper candy bar — it sharpens the chocolate and peanut flavours and balances the natural sweetness of the dates beautifully. Flaky sea salt like Maldon works especially well.
Customize freely
Swap peanut butter for almond or cashew butter, use dark chocolate chips for a less sweet version, or add a thin slice of banana under the peanut butter for a different flavour profile. These also freeze well for up to a month — eat them straight from the freezer for an extra satisfying crunch.
