Blend until smooth. Add the yogurt, whole pistachios, honey, lemon juice, tahini, vanilla extract, almond extract, and salt to a blender. Blitz on high until the mixture is completely smooth with no pistachio pieces remaining. Taste and adjust — add more honey for sweetness or more tahini for nuttiness — then blend briefly to combine.

Freeze. Pour the blended mixture into a freezer-safe container and cover tightly. Freeze for at least 4 hours until firm. The frozen yogurt will set solid after several hours.

Soften and serve. When ready to serve, set the container on the counter for 5 to 10 minutes to soften to a scoopable consistency. Scoop into bowls or cones and scatter the chopped pistachios generously over the top.

Taste before you freeze
Freezing dulls sweetness slightly, so the mixture should taste a touch sweeter than you'd want the final product to be. Taste the blended mixture and adjust the honey accordingly before pouring into the container.
What tahini adds
Just a teaspoon of tahini brings a subtle sesame depth that makes the pistachio flavour rounder and more complex — it's barely detectable on its own but the frozen yogurt tastes noticeably flat without it. Start with the stated amount and add more to taste.

This recipe sets beautifully straight in the freezer without any churning. For a slightly creamier, softer-scoop result, stir the mixture vigorously every hour for the first 3 hours of freezing to break up ice crystals as they form.
