Crispy, lightly spiced apple chips made with just three ingredients — slow-baked at low heat to draw out the moisture and concentrate all that natural sweetness.

Preheat and prep. Heat the oven to 225°F (110°C). Line a metal baking sheet with parchment paper.

Arrange the apples. Lay the apple slices in a single, non-overlapping layer across the prepared baking sheet — overlapping slices will steam instead of crisp up.

Add the spice mix. Stir the sugar and cinnamon together in a small bowl, then dust the mixture evenly over all the apple slices.

Bake low and slow. Slide the tray into the oven and bake for 45 minutes to 1 hour, until the slices are dried out and the edges have begun to curl. The chips will firm up further as they cool.

Cool on a rack. Use a metal spatula to carefully lift each chip onto a wire rack. Leave to cool completely before eating — this is when they reach their full crunch.
Cook's notes
Slice as thin as possible
The thinner the slice, the crispier the chip. A mandoline or the slicing blade of a food processor gives the most consistent results — aim for slices about 1–2mm thick. A sharp knife works too, just take your time.
Flip halfway for extra crunch
For an even crispier result, flip the slices at the halfway mark and dust with a little extra cinnamon sugar before returning to the oven. Not essential, but worth it if you have the time.
Storage
Once completely cool, store the chips in an airtight container at room temperature for up to 3 days. Any residual warmth or moisture will soften them, so make sure they are fully cooled before sealing.
