Wonton Crab Grilled Cheese

A clever mashup of crab Rangoon and classic grilled cheese — creamy, savory crab filling between double-toasted bread, finished with sweet chili sauce.

Make the crab filling. In a bowl, combine the cream cheese, chopped crab meat, green onions, soy sauce, sesame oil, and garlic powder. Stir until everything is evenly mixed and smooth. Set aside.

First toast. Spread mayonnaise on one side of each bread slice. Place a large skillet over medium heat and lay the slices in, mayonnaise side down. Toast until deep golden brown, then remove and set aside.

Assemble the sandwiches. Spread a generous layer of the crab mixture over the toasted side of 4 bread slices. Drizzle sweet chili sauce over the filling, then press the remaining 4 slices on top, toasted side facing in.

Second toast. Spread mayonnaise on the untoasted outer sides of each sandwich. Return to the skillet over medium heat and cook, flipping once, until both outer sides are golden brown and crisp.

Serve immediately. Plate the sandwiches and serve at once with extra sweet chili sauce on the side for dipping.

Why mayonnaise?
Using mayo instead of butter on the outside of the bread gives an exceptionally even, deep golden crust with less risk of burning. It also adds a subtle richness that complements the creamy crab filling perfectly.
Bread choice matters
Go for a sturdy thick-cut loaf — sourdough, brioche, or a good pullman bread all work well. Thin sandwich bread will struggle to hold the filling without getting soggy before the second toast.
Real crab upgrade
Imitation crab keeps things affordable and easy, but lump crab meat makes this sandwich genuinely special. If using real crab, pat it dry well before mixing to avoid excess moisture in the filling.
