Preheat the oven. Set to 350°F (180°C) and grease a deep 9x13-inch baking dish.

Build the base. Spread the frozen tater tots in an even layer across the bottom of the baking dish. Scatter the crumbled sausage and bacon evenly over the top, followed by the shredded Colby Jack cheese.

Add the green onions. Set aside 3 tablespoons of sliced green onions for garnish. Sprinkle the remainder evenly over the cheese layer.

Make the egg custard. Add the eggs, milk, hot sauce, salt, and pepper to a food processor and blitz for about 10 seconds until smooth and well blended. Pour the mixture slowly and evenly over the entire casserole.

Bake. Place in the oven and bake for about 50 minutes, until the egg is fully set and the edges are golden brown. If the top starts browning too quickly before the center sets, loosely tent with foil for the last 20 minutes.

Rest and serve. Let the casserole stand for 10 minutes before cutting — this helps it hold its shape when sliced. Scatter the reserved green onions over the top and serve straight from the dish.

Prep ahead
Assemble the casserole the evening before — layer the tots, meats, cheese, and onions, then cover and refrigerate overnight. In the morning, pour the egg mixture over the top and bake straight away. Add 5 to 10 extra minutes to the baking time since everything will be cold.
No food processor?
A large bowl and a whisk work perfectly well. Beat the eggs first, then add the milk, hot sauce, salt, and pepper and whisk until fully combined. The food processor just speeds things up slightly.
Freezer friendly
Leftovers keep in the fridge for up to 4 days and freeze well for up to 2 months. Slice into individual portions, wrap tightly, and reheat in the microwave for 90 seconds or in a 350°F oven for about 15 minutes.
