Mix the wet ingredients. In a large bowl, mash the bananas until as smooth as possible. Whisk in the milk, eggs, maple syrup, brown sugar, and vanilla until everything is well combined.

Combine and bake. Add the oat mixture to the banana mixture and stir until evenly blended. Pour the batter into the prepared pan and spread to the edges. Bake for 35 to 40 minutes until the top is golden brown and the centre is set with no jiggle.

Heavily spotted, very ripe bananas — the ones you'd use for banana bread — are ideal here. They mash to a smoother consistency and contribute far more natural sweetness and banana flavour than firm yellow ones.
