Build the broth. Combine the water, dried shiitake mushrooms, miso paste, soy sauce, rice wine vinegar, garlic, and ginger in a large soup pot. Bring to a boil over high heat, then reduce to low and simmer for 25 minutes. The mushrooms will rehydrate and infuse the broth with deep umami flavour as they cook.

Cook the noodles. Add the ramen noodle bricks to the pot, pressing them into the broth until fully submerged. Cook for 5 minutes, stirring occasionally, until the noodles are tender.

Serve. Ladle into deep bowls, making sure to include plenty of the rehydrated shiitake mushrooms. Top with your favourite ramen garnishes and serve immediately.
